Dark Chocolate Mocha Brownies with Berry Coulis

Do you love chocolate? These sinfully delicious brownies will blow your mind. This recipe is my own creation, I used a basic brownie recipe and modified it until I got exactly what I wanted… deliciously sinful chocolate upon chocolate. They are moist, cakey, thick, and filled with chocolate chunks. The added coffee brings out the richness in the dark chocolate without adding too much coffee flavor for those who don’t like coffee. I’ve made these brownies for coffee lovers and haters alike with raving reviews. Be warned though… these brownies have a tendency to disappear before they even get a chance to cool down!
Step by Step-Brownies
The nice thing about this recipe is that it really doesn’t create too many dishes. It’s also a great use for that coffee you forgot to drink in the morning! The brownies themselves can be made in one bowl. First, make sure you gather all of your ingredients. You’ll need butter, cooking oil, sugar, eggs, vanilla, flour, dark chocolate baking cocoa, dark chocolate chips, salt, and coffee. Youll also need a whisk or spoon, a medium sized bowl, and a brownie pan.
Once you have all your ingredients and tools, prepare your brownie pan. You’re going to want an 8×8 pan or something comparable. My brownie pan actually broke so I used a 9×4 pan, and that worked just fine. Spray your pan with baking spray or lightly flour and set aside. You’ll want to preheat your oven to 350 as well. Once this is done, combine the butter, cooking oil, and sugar in the medium bowl. It’s important for the butter to be HOT for this recipe, so make sure you melt the butter and use it right away. This helps it incorporate with the sugar, creating a really nice texture for the batter.
Once these three ingrediants are incorporated add in the eggs, coffee, and vanilla. Be careful not to beat the batter too much. The more you mix and beat the mixture the more air you add in, which changes the texture. The brownies will be more airy and less cakey and moist. We want a nice thick batter. So only beat for approximately one minute until the batter lightens slightly.
Next, add the flour, cocoa, and salt into the same medium bowl. Beat again, until just combined. I’ll say it again… do NOT over mix this batter! You want these ingredients to be just incorporated. Once all the wet and dry ingredients are combined and you have a nice, smooth, dark batter, add in any additives of your choice. I personally recommend dark chocolate chips, but you can use nuts, milk chocolate chips, white chocolate chips, or anything else you so choose. Gently fold in your additives, don’t beat the mixture again. You want your chips or nuts to be evenly spread throughout the batter, but you don’t want to continue to beat the batter and continue to add air.
Once you have the batter ready, pour it into your prepared pan. Gently spread batter so it is evenly distributed in the pan. You can also top your batter with extra chocolate chips or nuts at this time if you choose. I personally didn’t, because these brownies are sooooo rich already, I felt like it would be overwhelming. But if you didn’t add any chocolate chips in the batter you can always add them here. It’s really up to you!
Put your brownies in the oven and bake for approximately 40-45 minutes. DO NOT OVERBAKE. You want to bake them until the center of the pan no longer jiggles when moved. Remember, these brownies are cakey, and we have chocolate chips in the batter. So if you test for doneness using a knife or toothpick, you won’t get a clean test. Due to this, test for doneness by jiggling the pan and see if the batter moves at all. If it doesn’t, take the brownies out of the oven and let cool. They will continue to bake in the pan while cooling so be careful you don’t leave them in the oven too long.
Once the brownies are cooled, cut to desired size and enjoy your new favorite sinful pleasure.
You can always enjoy these brownies as is… or you can continue on for a little extra zing to this already amazing dessert.
Berry Coulis
It sounds intimidating and fancy, but a good berry coulis is actually really simple to make. It’s also so incredibly versitile, you can use this for pretty much anything your heart desires. But for today we are putting our own twist on a classic; chocolate and berries.
You can use any berries you want to for this recipe, but due to the supply chain shortages I had really limited options at my grocery store when I was preparing for this post. I used strawberries, but you can definitely use raspberries, blackberries, or a combination. Just substitute whatever berries you want for the strawberries I used.
For this you’ll need a small stovetop pot, a blender (or imersion blender), a fine mesh strainer, sugar, oranges, strawberries, and limoncello. First you are going to want to prepare your fruit. I used the zest of the peel of one orange, freshly squeezed orange juice from one orange, and rough chopped the strawberries. Once you have all the fruits prepared, add your sugar, zest, and orange juice into the pot and melt over medium low heat. This is the hardet part o this recipe. You’ll want to keep a close eye on your sugar because it can burn really quickly. So melt over low heat and stir consistently, keeping a close eye.
Once the sugar crystals are completely dissolved add the strawberries and your sugar syrup to a blender. I used an immersion blender for this step, but if you don’t have one, a regular blender works just as well. Blend until the mixture is smooth.
Once you have a nice smooth mixture, place a fine mesh strainer over a bowl or the pot and strain the mixture. The liquid will be thick so you may want to take a spoon or spatula and press it into the strainer to help drain the liquid. Disgard the seeds and you should be left with an aromatic, smooth, brightly colored mixture. Add in a tablesppon of limoncello and mix well.
See? Simple! I promise it sounds much more intimidating then it actually is. But it’s worth trying because the tartness of the berries and the zing from the liquor adds so much to any baking recipe or even your favorite breakfasts!

- 1/2 cup HOT butter
- 1 Tbsp cooking oil (your choice)
- 1 1/8 cup sugar
- 1 large egg
- 1/3 cup of coffee
- 2 Tbsp vanilla
- 1/2 cup all purpose flour
- 1/2 cup unsweetened dark chocolate cocoa
- 1/4 tsp salt
Berry Coulis
- 1/3 cup sugar
- Zest from 1 orange peel
- Juice from 1 orange
- 12 oz berries (your choice)
- 1 Tbsp Limoncello Liquor
Instructions – Brownies
- Preheat oven to 350 degrees. Prepare baking pan with baking spray or flour
- Combine butter, cooking oil, and sugar until mixed well
- Add egg, coffee, and vanilla and beat for one minute
- Add flour, cocoa, and salt and mix until combined
- Add chocolate chips or other additive and gently fold
- Pour batter into baking pan and spread evenly
- Bake for approximately 40 minutes until center no longer jiggle
- Remove from oven and let cool
Instructions – Berry Coulis
- While brownies are baking heat sugar, zest, and orange juice over medium low heat and stir consistently until sugar is melted
- Add fruit and blend until smooth
- Strain through wire strainer to remove seeds
- Add liquor and mix
Serve you sinfully delicious brownie and top with coulis. ENJOY!
